"YELLOW CHICKEN" (CURRY CHICKEN WITH APPLES AND PEARS)

The kids call Luis’ curry chicken with apples and pears “Yellow Chicken,” and go cuckoo over it.
On a recent trip to Charlotte, Luis pulled the dish together with the help of our godson, Noah. It’s only a handful of steps and the smell of the chicken, curry, fruit and cream bubbling on your stovetop is reason enough to give it a try.
Step 1: Chop a whole, preferably organic, chicken into pieces.
Step 2: Heat a douse of oil in a large pan over medium-high heat. Salt and pepper chicken and add to pan. Sauté until skin browns. Add 2 cups chicken broth and bring to a boil, then lower heat to simmer.
Step 3: Peel and chop 4 apples and 4 pears into small squares.
Step 4: Put half of the fruit in a blender and add 1 pint heavy cream, 4 tablespoons curry powder (or to taste) and a hefty pinch of salt. Blend.
Step 5: Arrange chicken pieces on bottom of a cast iron cooking dish. Pour curry blend on top and add remaining chopped fruit.
Step 6: Cover dish with lid and cook on medium on stovetop until it begins to boil. Lower heat to simmer and cook approximately 45 minutes. Add salt to taste and serve over rice.
